Boil the potatoes until partially cooked, drain and let cool down. If you want take the skin off, I like it on. Slice to 1/2cm thick.
Thinly slice the red onion
Slice the gorgonzola as well. Feel free to use any sharper blue cheese if you want.
Take a ceramic baking tray, drizzle the bottom with some olive oil
Start placing the potatoes, gorgonzola and red onion in layers sideways.
Add the pitted olives on top
Blend the oil with parsley and basil leaves to make the dressing. Drizzle on top. Bake for 30min at 200C.
