INGREDIENTS
Fry the ribs in oil. I used corn oil, but you can use oil of choice
These are the ingredients that I used. If you don't want it spicy feel free to leave out the jalapeño.
Cut up the tomato, onion and jalapeño into slices
I used one jalapeño for some kick
Cut up your zucchini is quarters then slice them up
This is what your pork should look like when it's nice and fried. Should be browned on all sides
At this time add your chopped up tomato, onion and jalapeño. Hold off in the zucchini.
Let it cook until the tomato is pretty much unrecognizable
At this point add your oregano powder to taste... I would say half a tablespoon
Your cumin powder... About half a tablespoon
Garlic salt to taste and mix it all up
When things are mixed...it's time for the zucchini. Mix in the zucchini.
Add some water... Just enough to almost half cover the meat
This is what it looked like when I added the water before mixing.
Cayenne if you want so extra kick
Let it simmer until the zucchini is cooked. And this is what it should look like after it's done.
You can serve it with beans and tortillas Or rice of choice... I went with steamed rice.
- 1.0lb Pork ribs (cut about 1-2inches long)
- 2.0 Tomatoes
- 1.0 Onions
- Cumin powder
- Clove powder
- Garlic salt
- 2.0 Zucchini
- Cooking oil
