Score pork belly pieces and place fat side up in a hotel pan.
Create a program- Step 1: Steam 212F 80% fan for 5 minutes. (Larger pork belly pieces will be 10 minutes.) Remove pork belly from oven after step 1.
Flavor with desired seasonings.
Both sides of the pork belly.
Place pork belly on the combi grill rack.
Place back into the oven and proceed to step 2.
Step 2: Combi 170C (340F) 30% humd. 100% fan with a probe set temperature of 72C (161F).
Step 3: Convection 250C (480F) 30% humd. 100% fan for 5 minutes to crisp the skin.
Remove pork belly from the oven.
Plate pork belly with mole sauce and serve.
