Lay out one sheet of aluminum foil per serving and spray with cooking spray.
Slice the lemon into thin slices.
Arrange three lemon slices per serving on aluminum foil.
Lay salmon filet on lemons.
Top with thin pats of butter.
Sprinkle with salt and pepper.
Fold up in foil, tightly wrapping ends. Bake on a cookie sheet also lined with foil as the packets may leak, at 300 degrees for 20 minutes.
Open the packets and serve over the lemon slices. Also really good with spicy lemon cream sauce.
