A few notes: 1) Use whatever cream or cream substitute you can have/like. 2) American bacon is different to English/Aussie/Irish bacon, you can get Irish bacon in Wholefoods which is similar to this.
Put the water on to boil for the pasta. Don't forget that like I forgot to take a photo of it.
Fry the bacon, not too crispy. Mmmm doesn't that look delicious.
Don't panic if this is what your pan looks like after, we're going to fix that. (If not I'm in big trouble with my Mum!)
Set the bacon aside, dab it with a paper towel if it's very greasy. Try not to eat it.
Chop up the dark green part of the green onions (spring onions in UK English).
Grab the tomatoes and take an artistic foodie photo.
Chop them up.
Usually Boscaiola is made with mushrooms but I can't eat them. I had it with tomatoes in a restaurant one time and thought it was delicious so that's how I cook it now. Choose your preference!
Grab the bottle of wine and consider whether it's okay to drink alcohol or not yet.
Now is a good time to put the pasta on, depending on cooking instructions. Mine takes 8 minutes.
Boil the kettle.
Dissolve the stock cube in boiling water, I only ended up using about half this but it's good to have a bit extra in case your sauce ends up too thick.
Chop up the bacon. Try not to eat it still.
Decide it's okay to drink wine now and pour yourself a glass.
Put the onions in the pan with a little olive oil if the pan is dry. Add the wine after 2 minutes and simmer on low for several minutes until the liquid reduces by half.
You've probably started to notice the bacon gunk is coming off the pan now. Yay! Add the tomatoes and sauté for 1 minute.
Add the chicken stock.
Add the bacon and simmer for 2 minutes.
Ideally around now your pasta should be ready. Drain and toss in some olive oil so it doesn't get sticky.
Add a generous serving of cracked pepper, parsley or basil, and about this much cream.
Stir in the cream. Simmer for 2 minutes.
Pour the pasta into the pan.
Mix together... Hmmm that's quite a lot for one.
This is a lot of pasta, but I'm hungry.
