INGREDIENTS
Fry thinly sliced onion in oil in a thick bottom heavy pot.
Add cumin seeds, whole red chillies and bay leaf to onions while frying.
Wait till the onions turn light golden brown to add garlic.
Now add salt, coriander powder, red chilli powder and garam masala (hot spices powder).
Mix it with fried onions for a minute.
Now add peas to the pot. You can use fresh or frozen peas.
Stir and gently fry peas with onions and spices for 5 minutes.
In another bowl, soak rice in water as per the rice type.
Now the oil separates and peas are gently fried, its time to add rice to it.
Add rice to the pot without water (drain out as much water as you can). Stir rice for a minute.
Now add water double the amount of rice (for 1 cup rice, add 2 cups water).
After 15 - 20 mins, when rice is nearly cooked, remove the excess water.
Cover the pot and steam the rice on low heat for 10 mins.
After 10 mins, open and fluff the rice with a fork gently.
Serve hot with salad on top!
