Preheat oven to 160 fan forced
Place butter sugar eggs. The dark sugar I have used is rapadura a natural sugar which will give mixture darker colour castor or white can be used instead
Beat till so
Add flour and yoghurt
Slowly mix
Cut passion fruits in half and scoop out seeds
Pour through strainer
Pour juice into mixture and mix
End mixture should look like so
Scoop mixture in muffin tins like so
Place in the oven at 160 for 15-20 minutes
Icing Place icing sugar, butter , and repeat passion fruit juice step with left over passion fruit and whip together
Place 3-4 scoops of passion fruit seeds in the icing mixture and whip
Whip till like so
Ice and enjoy
