I love scallops but was intimidated to make them at home. Whenever I tried they came out rubbery! But practice makes perfect and I learned the key was to not overcook them and keep it simple.
Start with the scallops - here I'm using fresh jumbo sea scallops. Rinse and pat dry.
Sprinkle on the pepper - fresh ground is the best but any kind will do.
Shake on some salt. That's it. Nothing else. Nothing fancy. Just enough to enhance the flavor of the scallops because, after all, that's what you want to enjoy, right?!
Preheat your pan (medium-high heat) and get it hot. Melt the butter in your skillet and watch it sizzle! This is going to give you a delicious crust on a scallop that's tender inside.
Set the scallops in the melted butter. Don't move them around. Leave them alone. Depending on their size, cook for just 2-3 minutes. Then turn over & cook for 2-3 minutes on the other side. That's it!
They should still be quite springy if you press them with your thumb (or fork). If they are very firm or stiff, they're already overcooked. Serve while centers are still slightly translucent.
Give them a squeeze of lemon and enjoy alongside your favorite vegies or sides. The scallops will melt in your mouth! So fast and easy to prepare and so delicious! Enjoy!
