Slice Zucchini thin and arrange in overlapping pattern
Beat olive oil, egg, and herbs relentlessly
Brush onto zuccrusti
Bake on parchment paper for 30 minutes on 425
Flip onto another parchment paper and bake the other side for 15 mins
Let the zuccrusti sit for a while to setup
Gather what you like. I had onion, banana peppers, roasted garlic, marinated artichoke, and sun dried tomato. Use fresh mozzarella or you're fired. I cheated with the sauce (it's canned).
Arrange all the ingredients (except the cheese). Fill in any small zuccrusti holes with something.
Put the cheese on next
Put the sauce on top (I know it defies what you've come to understand as the order of pizza operations, but the sauce will undo all that hard zuccrusti work if you don't -- you've been warned).
Bake at 425 for a while and then finish under broiler. Slice and eat.
- 3.0 Zucchini
- 12.0oz mozzarella (fresh)
- 1.0 can of pizza sauce
- 1.0 garlic clove
- 6.0oz sun dried tomato
- 1/4 onion
- 2.0Tbsp dried Italian herbs
- 1.0 small jar marinated artichokes
- 1.0 egg
