First lift your octopus from the freezer. YOU NEED TO FREEZE THE OCTOPUS TO HELP TENDERISE IT
Defrosted octopus
Give it a wee rinse
Bring a pot of unsalted water to the boil
Blanch the octopus 4 times. Place in the water for 15 seconds, lift out. Bring back to boil and repeat
Wait for it
15 seconds later
Back to the boil
And repeat
When you have done this 4 times let the water gently simmer for 40 minutes or until tender
Next wash some potatoes
Like this
Add to octopus after 25 minutes
This is the rest of the stuff you'll need
Chop the parsley
Let octopus cool a little
And the potatoes
Slice potatoes
Place in a nice way on a board/plate
Next remove a tentacle
And slice
Place on top of your potatoes
Sprinkle with sea salt
Drizzle with good EVOO
Dust with sweet paprika
Sprinkle with parsley
