Marrow bones: very easy to cook. Throw it in the oven and you're done in 20 min. Start with 4 fresh marrow bones from your butcher.
Preheat your oven at around 200 Celsius degrees. Add the marrow bones with the wider marrow side up.
Cook for about 20 minutes, until the marrow turns grey/ brown in colour. Check the colour on the inside by inserting a knife to make sure it's cooked thru.
I'm serving it with sautéed veggies: salsify, asparagus, green beans.
Scoop the marrow out on your toast. Treat it like butter. Spread that thing!
Sprinkle salt and pepper, fresh parsley, a few drops of lemon juice. The lemon cuts the very, very rich consistency and taste of the marrow.
Like this. Now devour!
Delicious! Not for the heart fainted ones :P
The original recipe included a "sauce" made of parsley, salt, pepper, lemon juice and capers. You're supposed to top it on your marrow toasts. I couldn't be bothered :P
