Chop the leek
Add it to a pan with some olive oil and a splash of water
Pick the parsley leaves, rinse and chop them
Stir it in.
As the leek softens add the pork mince (or the sausage crumbled)
Add salt and pepper to taste and keep cooking for 10min
Lower the heat and add the blue cheese in chunks. Add also the wine.
Once the cheese is melted keep cooking to let the wine partially evaporate and reduce the sauce
Drain the gnocchi and toss them in. I am using red cabbage gnocchi, you can find how to make them among my guides
Sauté quickly to mix everything evenly
Plate and shave some parmesan on top. Enjoy!

- 200.0ml White Wine
- 200.0g Pork Mince or Plain Sausage
- 200.0g Blue cheese (eg gorgonzola)
- 250.0g Gnocchi
