So here is a fun way to have lasagna if you will. Delicious and easy. Don't mind my two pounds of meat. I thought I had more wonton wrappers than I did so I had to scale. The recipe reflects that
One onion!... Also preheat the oven to 375 degrees F
Chop it up!
Get some olive oil in a pan and get it nice and hot! Add the onion and sauté for about 4-5 minutes stir a bit
While the onion is cooking chop the garlic
And the mushroom
After the 4-5 minutes add the garlic and mushroom and sautéed another 2-3 minutes
Add your turkey and cook
While we let that cook a bit lets get the ricotta ready. Add the ricotta, 2tsp Italian seasoning, 1 tsp garlic powder, a pinch of salt and pepper, a pinch of red pepper flakes into a bowl
The cheese, this container was right about 3 cups
The spices then just mix it up and set it aside until we are ready!
Now the meat is about half way cooked, about 6 minutes. Now add your seasonings ->
1.5 tablespoon Italian seasoning 2 teaspoons garlic powder 1-2 teaspoons salt and pepper ..to taste. Mix it all up and let cook another 5 minutes
Again I anticipated making a larger batch, so this is a larger can of crushed tomato.. For the scaled version use the 14.5 ounce can
Add it in
Mix it up and turn it to low and let it cook. While it cooks we will get our salad going!
Cube the bread, making about 2 cups or so.
Add it in a bowl with a few tablespoons of olive oil, 2 teaspoons garlic powder, 1/2-1 teaspoons of salt and mix it up
Toss it on a cookie sheet and bake about 8-10 minutes until brown and toasted
So much flavor in a cube of bread! Fresh croutons always taste best! Now set them aside
Get your cupcake pan out, again I only ended up using 1 of these
Spray it or in my case I had non so I buttered it, just to help release the cups after cooking. These silicone molds are great for removing the cups easily
So yes you read that right, we are using wonton wrappers, trust me it tastes great!
I forgot the picture with just the wontons, simply add them in each cup and push it down, then add a bit of the cheese, a little will go a long way!
Add a little bit of meat on top
Then take your mozzarella
And add a bit in each cup.
Then do the same thing, two layers was just enough for these cups... So we have wonton, ricotta, meat, mozzarella, wonton, ricotta, meat and mozzarella. Pop it in the oven for about 12-15 minutes
While that's going get a pot of water on to boil
Once boiling, add your egg for 60 seconds, that's it! Then run it under cold water to stop cooking, this is coddling the egg to ensure there is no bacteria on the raw egg
Now for the Caesar!!! The fresh dressing makes this! Don't be afraid of the anchovy paste!!!! Lol
Add everything from the Worcestershire sauce to the pepper and give it a whisk.
Take your egg
Add it in to the mix and whisk until fully incorporated and creamy! Again being coddled no bacteria!
Nice and mixed!
Now slowly add the olive oil while mixing like a mad person to emulsify the dressing and make the oil mix in well! Thanks to my wife for the help! :)
Look at that, creamy and delicious!
Right A out the same time the lasagna cups are done! Take them out of the oven and let them cool for a minute
Tear the romaine into bite size pieces Nd add to a bowl
Add your cheese and croutons
Like so, then the dressing and toss with wooden spoons or by hand! Now let's eat!
