Karela or bitter-gourd is usually found in Indian grocery stores. It's very bitter as the name suggests, but has many health benefits. Cut the karela vertically, remove the seeds and chop them.
Heat oil in a pan and fry 1/2 chopped onion.
Got my spices here.
Once the onions start to brown add 1/2 tsp of turmeric powder.
1/2 tsp of chili powder or cayenne pepper.
Salt to taste. Add a pinch more of salt to counter the bitterness of karela.
Mix well.
Add the chopped karela.
Mix well and let it cook. Karela has a lot of water, so keep it on medium flame, no lid and let it cook. Sit every 5 mins, so it doesn't stick to the pan. Cook for about 20 mins.
Cook till karela is slightly brown and pieces separate easily (not sticky). Cook till slightly more brown than in the image. Serve with chapattis.
