How to cook kale with tomatoes and peppers
Very simple an healthy veggie side dish.

INGREDIENTS
Gather your prepped ingredients before you hit the stove
Sauté the peppers, garlic and onion in a little oil.
Once softened but not colored add the tomatoes and bring to boil
Turn down to a simmer and add the kale to the pan. Don't mix it just yet.
Put a lid on to steam the kale a bit.
Once it has shrunk down in size and softens up you can mix it easily now.
Once it's mixed just cook for a few more minutes to soften the kale stems and ribs a bit more. No need to over cook the kale to mush, I like it with a bit of bite still
Add the Dijon and vinegar. Season with salt and pepper.
Mmmmmmmm this dish is so fresh and flavorful, I think in going to scoop out some leftovers right now.

- 1/2bnch Kale
- 2.0c Diced canned Tomotoes
- 1.0 Onion (Sliced)
- 2.0 Bell peppers (diced)
- 2.0Tbsp Garlic (Minced)
- 1.0oz Apple cider vinegar
- Salt and pepper
- 1.0Tbsp Dijon mustard
