Wash and dry your kale completely.
Tear the leaves from the stems and place in a bowl.
Melt the coconut oil: about 2 tablespoons per 10 leaves.
Pour the oil over the torn kale.
Mix thoroughly to coat every piece. Your hands work best.
Sprinkle on salt pepper, and any additional spice you choose.
Toss again to distribute spices. Don't worry--coconut oil is great for your kitchen hands!
Lay the coated leaves on a parchment lined baking sheet.
Place them in the preheated 275 degree oven for 25-30 minutes.
When the leaves are crispy, but still green, they are ready.
Mmmm.. Enjoy plain or dipped in salsa!
Store in an airtight container for a few days--if they last that long!
