INGREDIENTS
Dry roast vermicelli and keep it aside.
In a pan heat oil and add mustard seeds once they start spluttering add cumin seeds
Add the onions and let them cook for few minutes until they start to brown on the edges. You can add a couple green chillies if you like it spicy. I am avoiding it today for my toddler 😉
Add potatoes till half cooked. Add a little salt
Add the carrots, bell pepper to the mix. You can also add other vegetables or substitute any of these with what you love, like celery, broccoli.
To make the process fast I boil water now on a separate pot.
Add boiling water, chopped cilantro & mint. Let it come to a boil. If you already have hot water like me it will boil in a minute or two.Add splash of lime,salt and pepper. Give it a taste test.
Once it's boiling add roasted vermicelli to it
Let it cook till it soaks up most of the water and then cover and cook on a low flame
Enjoy !! You can serve this with some indian mango pickle and plain yogurt on the side 😊
- 2.0c Vermicelli
- 6.0c Water
- 1.0 Potato
- 1.0 Carrot
- 1/2c Peas
- 1/2 Belpepper
- Hand full cilantro
- 1.0Tbsp Lime juice
- 1/4tsp Mustard seeds
- 1/4tsp Cumin seeds
- 2.0Tbsp Oil or butter
- 1/4tsp Turmeric
- Salt to taste
