How to cook hot and spicy soya chunks

The best source of vegetarian protein, tossed into some spicy and aromatic tomato gravy!

Once the soya chunks are resting off the heat, chop your vegetables as shown in the picture. Take a thick slice of ginger so it can be grated easily in the preparation. Cut small potato cubes.

We heat the pan again with some vegetable oil. Squeeze the soya chunks with your hand from water as much as possible and them put them into the pan. Light fry them in the pan for about 5 mins.

After a minute or 2 will remove the lid, put some crushed cinnamon-stick (very little) and fry the onions together until its golden brown.Now add some freshly grated ginger and finely chopped tomatoes

Cook the tomatoes until they become nicely pulpy. Now add half a tbsp of Turmeric powder (optional), one tbsp of coriander and cumin powder. Cook the spices for a minute and then add 2 tbsp of yogurt.

Add salt to your taste and 1/2 tbsp of sugar.

Cook and mix all the spices well with yogurt for 2 more minutes. Time to add the lightly fried soya chunks and cook it with the masala for 2 minutes. After this will add the fried potato cubes as well

Add 1/3 cup of water and keep cooking for 5 more minutes until the soya chunks and potato cubes soak all the spicy gravy and get cooked completely. Put the lid on so the aroma gets infused in the prep

Serve it with plain steamed rice and I bet you will enjoy this recipe! :D To get the optimum taste add some ghee or butter in the steamed rice.. ;) This dish can be served with roti or chapati too.
