Assemble ingredients. I recommend an over ripe banana (I won't eat them once they have spots)
Mash up the banana in a bow
Add the egg and scramble and add about a tablespoon of the peanut butter of your choice
Mix it all up!
Melt your butter, or coconut oil, in a hot pan
Pour in batter when butter sizzles
After 3-5 minutes flip the pancakes to finish cooking
Top and serve! I like topping with honey and cinnamon. Serves 1
