How to cook fried squash blossoms

Squash blossoms arrived this morning at Withrow Farmer's Market. In my journey of eating local seasonal food...here's a first attempt at blossoms. A little indulgent, perhaps, but a simple pleasure.

Make sure no critters are hiding inside!  Rinse, take out the stamen, allow to dry.  (if they aren't dry you will have too much splattering).

Mix egg yolk with .5 cup cold water.  Blend in .5 cup flour.  Dip blossom in to cover.

Fry for 2 minutes.  I didn't have enough oil, but it still worked...though the end product looked a little flatter because of the shallow oil.
