Break the eggs into a big bowl. Add a teaspoon of salt and soy sauce.
Whisk the egg.
Add the rice into the whisked egg. Prefer overnight rice as they won't lump together.
Mix well and put aside. I prefer this method as you will have each rice coated with egg and will give u the golden fried rice effect.
Dice the carrot, French bean and luncheon meat.
Add some oil to the wok and fried the luncheon meat in medium heat for about 3 minutes.
Fried until golden brown and set aside.
Add some oil and garlic to the wok. Fragrance the garlic for awhile until it turn light yellow.
Add the diced French beans and carrots and stir fried for about 3 minutes or until the French bean is cooked. Add some salt here.
Set aside when is done.
Add some oil and garlic to the wok again. Fragrance the garlic for awhile until it turn light yellow or golden brown in medium heat.
Add the rice that mixed with egg earlier and stir fried in high heat.
Keep stirring and try to spread the rice around the wok. Keep frying for about 5 minutes until golden brown in high heat.
Add the cooked luncheon meat, French beans and carrot.
Fried together for another minute. Make sure mix well. Season with salt to taste.
