First step: Making the mixture of buttermilk and mint leaves. It looks strange and smells weird, but in the cupcake; it is just perfect!

Now it is time to make the batter!

Line a standard muffin tin with paper liners

Bake for approximately 25 minutes at 162 Degrees or until just slightly golden and a tooth pick comes out clean

  • For the batter:
  • 60.0ml Buttermilk
  • 1.0 small mint plant (leaves from this)
  • 96.0g Flour
  • 0.0tsp Baking powder
  • 50.0g Butter
  • 100.0g Sugar
  • 1.0 Egg
  • 1.0 Lime
  • 1.0Tbsp Rum
  • A few drops of vanilla extract
  • For the mint-infused rum:
  • 2.0 Rum
  • 1.0 Sprig of mint (leaves from this)
  • For the frosting:
  • 170.0g Butter
  • 250.0g Icing sugar
  • 1.0Tbsp Rum
  • 0.0Tbsp Lime juice
