Peal and dice the pineapple
Chop garlic and onion and Cook them on a hot pan, then add the pineapple please
Once it's in the pan, add the apple cider vinegar
Add water to the pan whit pine apple, then the sugar, bay leaf, cinnamon, clove and ginger, let it simmer down with low heat
On an other hot pan start cooking the adobo ( onion, dry chilies, garlic and tomatoes, boiled, blended and reduced ) that's the adobo
Add the fish and let it cook down
Once it's cooked, the fish it's going to start shredding by it self like in the photo then it's ready, add salt and pepper
Chop onion and cilantro for garnish
Shred the cheese, you can use any cheese you want, for me the best to use for this, is Oaxaca cheese, the most common and popular cheese in Mexico 100% Mexican product 🙌
Now we have all ingredients ready, we start building up our dish. Get a wheat tortilla, on top out some cheese, on top of the cheese put the fish, and more cheese 🙊
This looks like a quesadilla with 2 tortillas (like a sandwich) put it on a hot pan till you get a nice golden- brown color on both sides
Once it's ready cut it in 4 pieces, plated and on top put the cured pine apple and onion and cilantro, make a guacamole and decorate the plate the way you like it, make it looks tasty, 👌
- 4.0 Fish ( tilapia )
- 1/2c Adobo
- 1.0 Pineapple

- 1/2c Brown sugar
