This is optional-- this dish is awesome with rice! Before I start  put some rice in a small pot. (rice cookers are nice) 1c rice, 2 cups water. If you want more rice double water for each cup of rice.

So lets start! Take the bulb of garlic and mince 1/2 or whole bulb. Brown it. Add the whole onion (cut how you like) Cook til onions are a little soft, (5 min). Set aside.

Cut the pork into cubes 1x1in. Add some olive oil in a  medium sized pan. Fry pork til brown. (Mine aren't fully brown) Dump grease  when cooked.

While pork is cooking, mix the soy sauce, vinegar and brown sugar together in a bowl. Set aside.

In a medium sized pot, put in the cooked pork, and add the garlic and onions. Stir to mix everything.

Put cover on and let cook for 15 mins. Do not stir!

Should look like this after the 15mins. Now turn the stove to one notch below the medium heat. So mine is a 4.

Take 5 or six bay leaves and spread on top of the pork, do not stir. I added about 2 more tablespoons of brown sugar because I like it sweeter. Sprinkle it in.
