Gather your supplies and ingredients.
Preheat your oven to 450
Separate your eggs. If possible put each yolk in a separate container. Also try not to break your yolk like I did...
Start mixing egg whites on low.
Add in your salt and increase the mixer speed slowly.
Mix until stuff peaks form. Doesn't have to be just one giant one...
Grate up some deliciousness.
Gently fold cheese into eggs with a spatula. Be careful to not deflate the eggs.
Place your egg white mixture onto your baking sheet. Form into two little nests with a depression in the middle of each for the yolks.
Bake egg white mixture for 3 minutes and take out of oven.
Place yolks into the depression and bake for 3 more minutes.
Ta-da!! They're ready!!

- 1/4c Gruyere
- 1/4Tbsp Kosher Salt
