Wash your eggplant and cut off the bottoms.

Cut them into slices; they should be 0.5 cm thick.

Put the slices in a colander and salt them. This step is important because salt drains your eggplants from water.

Chop up your cheese and your ham.

Whisk your eggs with a pinch of salt.

Wash carefully your eggplants with running water and wring them.

Place a ham slice and a cheese slice on each eggplant slice.

Put another eggplant slice on the other to create a sort of sandwich.

Flour your eggplant cordon bleu on both sides.

Soak both sides of your eggplants into the whisked eggs

Pass them into the breadcrumbs

Heat some oil in a frying pan. Put your eggplants in the pan.

Cook your cordon bleu for 3-4 minutes per side.

They should be golden.

- 1.0 Eggplant (500 grams)
- 150.0g Cheese
- 150.0g Ham
- 2.0 Egg
- 5.0Tbsp Flour
- 5.0Tbsp Breadcrumbs
