How to cook easy chicken parmesan with roasted tomato

Such a delicious and impressive meal, may seem complicated at first but there's skills here that will last a lifetime! I'll show I how to make escalopes, roasted tomato & breadcrumbs along the way! :)

This is really messy, I ended up with crumbs all over the kitchen... Hold a tea towel taut over the blender and bowl to stop the crumbs flying out. These hand blenders are great, mine was only \u00a33.25!

You want the crumbs to be about this fine. I made loads so I'm freezing about 2/3rds of them for future recipes, this is a great easy kitchen skill to have! :)

Next place your chicken breasts individually between a piece of cling film (or seran wrap or whatever u call it) and bash it gently with the rolling pin until it is all an equal, thin size- not 2 thin

Then add the Parmesan to the breadcrumbs, I just used store bought fresh grated stuff. Mix it well but don't squeeze it, keep it crumby! :)

Chop up some tomatoes into halves and if like me you don't like the seeds scoop them out! :P

Put the toms open side up on a tinfoiled baking tray and season with whatever you like, I used mixed Italian herbs, garlic salt and pepper, drizzle on some extra virgin olive oil. In the oven on med.

Season the chicken breast (again with whatever you like)  P.s. this is now a chicken escalope = new kitchen skills! :D

Put some plain flour out in a plate, crack the two eggs into a bowl and whisk lightly and place the egg bowl beside the flour plate, put the crumb bowl on the other side of the eggs= your station :)

Turn the chicken escalopes one by one in the flour until fully coated.

At this point I put on some pasta to boil. But you can have this with whatever sides you like.

Dip the chicken (one by one) into the egg...

Then into the breadcrumb mix, again make sure it's fully coated!

This is your breadcrumbing station!  Repeat with each escalope.

Check on the toms they should be softening up!

When you turn them over add a can of chopped or plum tomatoes and spread them out, stick them back in the oven.

Now put your escalopes into the now hot oil and butter, cook for 3-4 mins each side, ALWAYS keeping an eye on them!

By the time your chicken is underway the tons should be all hot and smooshy :) give them a squash with a fork until they are like a thick sauce and put them back in the oven

Next I put out my pasta but you could have chips (fries) or whatever!

Then get out the tomatoes, they should be like a thick rich ( but very healthy!) sauce now.

Spoon sauce onto the dish and place the Chicken Parmesan on top!

Mmmmm my fiancé was very impressed by this dish and so will whoever you cook it for be! See not so hard once you know how, and great skills you'll use a million times! :D Enjoy!
