INGREDIENTS
Soak/ wash your meat in vinegar and lemon
Gather all your ingredients
Once you meat is washed, season with one onion, garlic, 2 teaspoons of curry powder, all purpose seasoning, black pepper and a little oil. If possible let it marinate over night.
Put the pot in the cooker on medium heat and add some butter, when butter starts to brown, it is ready for the meat.
Add meat to pot and let it brown.
Once meat is browned, add 3 cups of water and cover pot. Leave it to cook on medium heat, keep stirring and checking for when meat is tender ( every 10 minutes )
Peel and dice 2 large potatoes, add them to the curry pot when your meat is nearly cooked. Make sure there is enough liquid, if not add a cup of water.
Once potatoes are cooked, add your coconut milk. At this stage you may also add more curry powder to your taste. Leave to cook on low heat for 10 minutes.
And there you go, I served mine with some rice and fried plantain. :-)
