Wash and Cut chicken into cubes
Make an assembly line of chicken, beaten eggs and corn starch. Dip chicken in eggs then corn starch.
Chicken should look like this when done with the corn starch
Heat oil in the pan, put salt and pepper on chicken and then add your chicken to the pan. Cook chicken till it turns a light golden brown, but not cooked through.
When chicken is ready, place it on a paper towel lined plate
Pre-heat oven to 325
Mix coconut milk, sugar and vinegar in a mixing bowl.
Place chicken in a baking dish and pour the coconut sauce over it. You can also add coconut flakes on top of the chicken for a more coconut flavor.
Place in the oven for about an hour and stir every 10-15 minutes.
And this is what your finished product should look like! Let the chicken sit for a few minutes so the sauce can thicken.
- 2-4 Boneless chicken breast
- Salt and pepper
- 2eggs, beaten
- 1cup of cornstarch
- 1/4 cups of canola oil
- 1 can of coconut milk
- 3/4 cup of sugar
- 1teaspoon of vinegar
- Coconut flakes (optional)
