Preheat oven to 400 degrees.
Begin by cutting the Meyer lemon in half. ( I like to use Meyer lemons because it gives the fish a sweeter taste)
Then squeeze 1 tablespoon of the juice using a juicer and set aside.
For the breading, mix the panko, coconut, salt, and pepper together in a shallow rectangular dish and then set aside as well.
Wash your salmon portions and place them in a non-stick baking pan.
Take the Meyer lemon juice and brush it on the salmon covering it completely.
Completely Cover each portion of salmon with breading on each side and place the salmon back in the baking pan.
Once back in the pan, drizzle the breading that is left over the fish.
Cook for 10 to 15 minutes in the oven or until tender.
- 1/2 pound salmon fillet (portions)
- 1/3 cup sweetened coconut shavings
- 1/2 cup panko
- 1 tablespoon meyer lemon juice
