Dice 2 cups of onions, 1 head of garlic and 1 cup of fennel
Dice 1 cup of red bell pepper
Measure out 1 tbsp oregano, basil, 1 tsp red chili pepper and 2 bay leaves
1 large can of crushed san Marzano tomatoes, 3/4 can of tomato paste
1 bottle of clam juice
Sautee onions, garlic and fennel in olive oil and butter until browned
Add red bell pepper and brown
Add 3/4 of a can of tomato paste and brown
Add 1/2 bottle of white wine simmer for five minutes
Add in crushed tomatoes, clam juice and dried spices
Simmer for one hour
Add chopped parsley to the sauce
Add seafood and cover with sauce, do not stir and let simmer for 5-10 minutes then serve
When seafood is cooked remove and serve!
Plate with sourdough and enjoy!
