In large shallow dish, beat all ingredients together except the bread, butter and maple syrup/honey.

Heat a griddle or non stick pan to medium heat, coat with butter or non stick spray.

Dip each piece of bread as you go on both sides into egg & pumpkin purée mixture, until well coated.

Cook each piece of bread on griddle on both sides until golden brown. When all pieces are done, top with chopped pecans.

Serve with warm maple syrup or honey and enjoy! Each slice = 160 calories

Cinnamon Raisin Pumpkin French Toast topped with Chopped Pecans

  • 8.0 Eggs
  • 12.0 Slices cinnamon raisin bread
  • 1/4c Solid Pumpkin purée
  • 1.0tsp Cinnamon
  • 1.0Tbsp Vanilla extract
  • 1.0tsp Pumpkin pie spice
  • 1/4c Sucanat (or brown sugar)
  • 1/4c Pecans, chopped
  • Butter or non stick spray
  • Maple syrup / Honey
  • Griddle
