Choose fresh pork trotters. Wash with salt and cut into pieces.
Preserve trotters with cooking wine and ginger.
Poach trotters.
Prepare sauce and spices: Dark Soy Sauce, Light Soy Sauce, Bean-cure Cheese, Ginger, Star aniseed, Cassia, Bay Leaves.
Pick them up out of water.
Stir fly Ginger with boiled oil.
Put trotters in, and stir-fry trotters.
Put soy sauce on, and stir-fry.
Put bean-cure cheese in, and keep stir-frying.
Add water to boil and put spices in.
Put them all in auto cooker and start a 1h timer.
Do what you want...
...about 50min later, prepare your favorite side dishes, eg. Lotus root...
Cut them into a "bite size".
Put them in...
Add crystal sugar.
