Heat olive oil in a frying pan on medium low heat. Add sliced onions and garlic. Sauté until golden brown
While the onions and garlic are sautéing, slice zucchini long and thin and then cut again so you have thin short strips.
Add rinsed cup of chick peas to pan and mix well.
Add the zucchini strips along with tomatoes. Simmer about 5 minutes on low heat.
Finally add the sliced cilantro, turmeric and curry. Cover and simmer for about 5 more minutes. I ate this dish as is! Its filling and pretty amazing!

- 1.0 Cup chickpeas

- 1.0c Organic canned crushes tomatoes
- 1.0tsp Olive oil
- 1.0 Sliced thin onion
