How to cook chicken sorrentino
A classic Italian meal. Very delicious & satisfying meal. Fried Eggplant & melted cheese taste great together BUT when you add chicken to the mix, you my dear, have hit a home run!! Bon a petito!βΊ

INGREDIENTS
Some of the cast members, the others were absentπ
Peel the eggplants
Slice them as thin as possible about 1/4".
Take your eggs and scramble it
Add 1 tbs of the grated cheese
In another bowl add the flour
In another bowl add the bread crumbs and to the bread crumbs add the last tbs of grated cheese. You should have 3 bowls now, 1 for the egg, the 2nd for the flour and the last one the bread crumbs ππ
In a pan over medium heat add a cup of oil. I used canola oil. You can use olive oil.
Take the eggplant piece and dredge it in the flour first
Then continue to dredge them in the eggs
And lastly the breadcrumbs
Make sure to press down gently on the eggplant so that the breadcrumbs could adhere to the eggplant.
Take the eggplant and start frying it. If the eggplant is too thick it will taste raw. I usually fix this while cooking by poking it several times with a fork so it can get cooked inside .π
Fry Until nicely brown.
Remove the eggplant and put it on a paper towel lined plate to absorb excess oil(sorry for the blurry pic)ππ―π
Now let's cook the chicken. Season it with salt
Ugh another blurry pic, sorry guys. Well add 1/4 cup of olive oil to another pan over medium high heat.
Take the chicken pieces and dredge it in flour
Pan fry them until browned on both sides.
Browning and almost done. When all the chicken cutlets are cooked remove them
And put it in a separate plate. I used my sons gabba gabba plate, isn't it cuteπ?
Now remove the oil from the pan the chicken was cooking in, put it in a cup.
Put the chicken back In the pan
Add two Tbs. of butter .
Add the chicken broth
The Marsala wine
And the white wine(my pics suck sorry)π©π«π¨ let it simmer.
We will now take the remaining 2 tablespoons and press it in some flour. Be generous please
You see this is it the way it should look.
Take that butter with flour and start mixing it together well
Add it to the sauce of the chicken. Stir it in well.
Now you have 2 options:1st one is you can use the pan your cooking the chicken in & start putting the topping on each chicken.Once you complete the assembly cover the pan & allow the cheese to melt.OR
Take your chicken cutlets and put it in an oven proof dish
Take the warm sauce and pour it over the chicken.
To each chicken piece add a slice of prosciutto. Prosciutto is expensive, don't go out and buy it if you don't want to. Use ham it's cheaper. It will still taste amazing, I promise π
The prosciutto is over the chicken.
Next we will add the eggplant. I fried my eggplant I just love the flavor. You don't have to. You can dip the eggplant in flour & fry it in a little olive oil. It will be naked just like the chickenπ

Now add a little of marinara sauce to each piece of eggplant.
Smother it .π
Add some grated cheese. Love me some cheese.βΊ
Add the fresh mozzarella cheese.
Wow, there are layers of flavors In this dish. Look at the cheese, just look at it.nomnom
This is a very tasty dish. I love it.
I love it so much I had to make a side of pasta in vodka sauce. Great combo. Eat your heart out.πππ
- 4.0 Slices of thinly cut eggplant
- 4.0 Chicken cutlets, thin sliced
- 1/4c Olive oil
- 4.0Tbsp Butter
- 4.0 Slices of prosciutto
- 4.0 Slices of fresh mozzarella
- 2.0oz Marsala wine
- 2.0oz Dry white wine
- 3/4c Chicken broth
- 1/3c Marinara sauce
- 2.0 Eggs
- 2.0Tbsp Grated cheese
- 1/2c Flour
- 2/3c Italian bread crumbs
- S&P to taste
