All needed ingredients: Smoked Rashers, Grana Padano Cheese, Eggs, Fresh Pasta, Creme Fraiche, Large Onion, Salt, Pepper, Olive Oil
Grate half of the cheese (we won't use the other half), chop the onion into small bits and cut the rashers into small pieces (roughly half inch).
Heat up some olive oil and fry onion with rashers. Add pepper generously.
Heat up the water for pasta. Add some olive oil and a bit of salt.
Break two eggs and put the whites into a big bowl and the yolks into small cups. Add a pinch of salt to the whites and whip until stiff.
Cook the pasta. For the fresh one it should roughly take 6 minutes, which you can use for whipping eggs.
When the whites are whipped, add a tablespoon of creme fraiche for each person (2 in this case) and mix the sauce. Add the pepper generously and mix again. Add half of the cheese and mix again.
Drain the pasta and put it back into the pot it was cooked in (Make sure there is no water left in it beforehand).
Top the pasta in the pot with sauce and rashers with onion. Mix everything together.
Place the pasta on the plates in a shape of little volcano with a crater on top. Put the yolk into that crater.
Add some pepper and Top it up with the remaining cheese. ENJOY!
