only the yolks will be used, so separate the yolks from the whites
couldn't find my egg separator, ao I just used a makeshift yolk picker
yolks separated
add the cans of milk add a few drops of vanilla
mix until well blended some like to strain the mix afterwards but I don't find I need to
in a pan or tray, place the sugar and moisten with a liytle water heat until brown and caramelized, swirling the pan constantly once caramelized, set aside to cool
pour the mix into the pan with the caramel
use whichever pan or tray is preferable
put water in the steamer. cover mix with foil. place in steamer and steam for ~25-30 mins
if you don't have a steamer, place tray in a large pan filled with water. place in oven pre-heated to 170 deg C
to check doneness, stick a toothpick into it. if it comes out clean, it's done
place in a container and refrigerate
