INGREDIENTS
Chop in fine squares the onion, the garlic And the green pepper
Add the meat to the bowl , And add your seasoning I like to use Goya adobo, salt, black pepper, paprika to give color And add flavor, some bijol to give it color , a pinch Of oregano
Mix all the ingredients Of the seasoning with the meat And Now we are ready for the cooking part
Heat the oil until it sizzles And then add a Pinch Of sugar then add the meat to brown
Move the meat until all sides are Brown And the meat starts throwing its own water
As the meat releases water still on medium high leave cover until the water dries out. Check the meat every 10 mins to make sure it doesnt dry completely
Halfway the meat will start to dry out the juices so in case is not soft yet you can add a Little bit more water
Once the meat is very tender you uncover And we are almost ready
Chop in squares the potatoe And the carrot if you choose to use it
Add the green pepper, onion, garlic, potatoe (optional), And carrots (optional) And cover again for extra 20 mins add one tablespoon Of water to allow sauce
