A Simple dish I grew up with. My mom would make this religiously for my father with cheddar cheese. He preferred his boiled for health reason, I like mine fried. This post is In memory of my daddy.😞

It is a sweet potato variety, you can use the batata the same you would a sweet potato. You can bake it,fry it,roast it, boil it etc.

Its an exotic veg., it might be hard to find. Check the Spanish markets they usually carry it along with other root veg.such as yucca, yautia, guineo.πŸ˜€

Today I will fry it. It's so good.\ud83d\ude0d Slice the batata about 1/4 inch thick. Add them to a bowl of cold,salted water. Let it sit in the water about 30 minutes.(optional)

When finished cooking put them on a plate lined with paper towel to absorb the extra oil

Enjoy as a snack or a side dish. I just love to munch on these sweet fritters . You can follow these same steps with yucca root. Yucca is so good fried.😍
