INGREDIENTS
In a medium bowl, mash your bananas with a fork or potato masher. It's okay if it's still a little chunk!
Beat in the eggs. The texture will smoother out, but it's okay if there's the occasional lump!
This is optional, but if you want you can sprinkle in a drop or two of vanilla, a pinch of brown sugar and some oats. These pancakes are also just as delicious without the extra flavouring though!
Mix in the blueberries.
In a small frying pan over medium heat, melt a bit of butter. Be careful not to burn it!
Pour in the batter with some blueberries. It's okay if the pancake is a little uneven, it'll still taste awesome!
Cook for 2-5 minutes. When the edges start to turn a nice golden brown it's time to flip them over. Cook the other side for 1-2 minutes and remove from the frying pan.
Once all the pancakes are cooked, you can toss on some of your favourite fruit! I put on some banana slices, blueberries and blackberries.
Delicious anytime, these pancakes make a great breakfast, snack and even dessert. Enjoy!
