If you are a fan of oatmeal cookies...you will love this recipe. It tastes just like the cookies :) Preheat oven to 350 and measure one cup brown sugar
In a food processor, pulse to blend the 1 cup brown sugar, 2 tsp baking powder , and 1 tsp each: salt, and cinnamon. I do this so that the brown sugar breaks up when you mix in the oatmeal
3 cups rolled oats. I don't use the quick cook kind but am sure it would substitute and turn out as well
Add your brown sugar mix into the bowl
In a separate bowl melt a stick of butter. Add: 1 cup milk, 2 tsp vanilla and 2 eggs. Mix well
pour into lightly greased dish. At this point you could add dried cherries, cranberries or white raisins. However our family like it just plain oats.
Bake about 25 min or until browned on top
Once cooked, start your cinnamon milk
Milk, a little sugar and cinnamon to taste
Scald for just a min or so
As you serve your baked oatmeal, pour the milk over each individual serving. I usually eat it without the milk but my kids prefer the oatmeal more moist
