I start by Preheating the oven to 400 degrees Fahrenheit. I have small wire racks that I use, but you can you a large one if you have that. Just make sure it's oven safe!

Place wire racks on top of the baking sheet. Hopefully you will not have to much over hang.

Place bacon on the wire racks, being careful to not have the bacon hang off the edges.

Place bacon in the oven on the center rack. Cook bacon for 20-25 minutes depending on your preference. If you like it more chewy than about 23 min will do it...more crisp...27.

I pull the bacon out when the edges are crispy but the center is still chewy. Let bacon cool if you plan to save it for later. You can dive in now if you want to:)

Once it's cool enough to handle, transfer bacon to a cutting board. TIP: you can store whole pieces of cooked bacon: wrap in a paper towel, then ziplock, and refrigerate. Reheat in microwave 10 sec.

Slice the bacon lengthwise and then chop into small bite-size pieces.

Place in an airtight container and refrigerate to save for later. Perfect for salads and baked potatoes or whatever sounds yummy with bacon. Use within 1 week....if it lasts that long ;)
