Heat the oil in a medium sauté pan over medium heat.
Add the chopped green onions and cook for 2-3 minutes, until they begin to soften, but don't brown. Add the carrots and ginger and sauté for another 1 or 2 minutes
1.0tsp Coconut oil (or olive oil)
2/3c Chopped green onions (white and green parts)
1.0c Peeled and minced carrots (about 4 carrots)
2.0Tbsp Peeled and minced fresh ginger
1.0lb Ground pork
1.0 8-ounce can (about 1 cup) diced water chestnuts
