Ingredients for 10 medium arancini
Defrost of slightly warm peas
Mince mixed and slightly browned
Add peas to mince
Add tomato
Add saffron to the cooked rice
Then add cheese ( grated provolone or mozzarella )
Whisk the eggs
Make rice balls with mince in the middle and cover with flour
Then wet with eggs and cover with breadcrumbs .finally fry in a pan with plenty oil , about 2 inches .
