Cook veggies and add to the empty pie crust (in this picture I used roasted asparagus and roasted red peppers)

Scramble eggs in a bowl and pour over the top of the veggies

Sprinkle cheese on top (I used feta here and added some fresh ground pepper)

Cook for 35-45 min at 350. It's done when knife comes out clean.

Let cool 10-15 minutes before cutting

  • 1.0 Frozen pie crust
  • 8.0 6-8 eggs depending on size
  • 3.0 Veggies of your choice
  • 1/2c Cheese (optional)
