Get your potatoes, a peeler. A sharp knife will do if you don't have one, and a pot big enough for all the potatoes and fill it with cold water.

Peel your potatoes and cut into the sizes you want or leave them whole if you prefer then put them in the water

Iv cut mine into 2 inch chunks, remember the bigger the pieces the longer to cook :0)

When peeling and chopping try not to leave the peeled potatoes out the water too long or they can turn brown :0•

Try and cut them all roughly the same size so they cook evenly

The water will be cloudy this is the starch from the cut potatoes, rinse out about two or three times till the water is clear

I prepared these in the morning and I'm keeping them in the water until dinner tonight so all I need to do is cook them! :0)

Put your oven on at full and get a high sided baking tray, boil your potatoes until they are easy to break up with a fork and basically cooked

Drain of your potatoes and add them back to the pot for the important bit....

Put the lid back on and shake them about till they are fluffed up a bit but not smashed into tiny pieces

Spread out on your baking tray season with salt and freshly ground pepper, a nice drizzle of olive oil and if you want to add herbs at this point like rosemary you can, but my kid doesn't like it :0)

Bake in the top of your preheated oven turning them every 5 minutes till they are a crispyness that suits you, all the fluffed up edges should be nice and crispy :0)
