Bring water to boil in a pot. Add a pinch of salt and one tablespoon olive oil
Once the water start boiling, add your pasta (I used gluten free pasta)
Chop onion finely
Chop your tomatos
Chop garlic finely
In a pan, pan fry onion and garlic
Cut anchovies and add to onions. Do not add too many anchovies otherwise they overpower the dish
Add tomatos after 2-3 min
Once pasta is cook, drain the water. Save a one cup of pasta water for later
Save one cup of pasta water for later
Once onion are golden brown, add capers and white wine and cook for 3 more min
Add pasta and mix. You can add the pasta water at this step and let it cook for another 2 min or until there is no more water
