You need 3 medium potatoes, 1 bunch of Methi leaves.
Cook the potatoes.
Separate the leaves from the stems (discard the stems).
Wash the leaves to remove all dirt.
Drain and Keep aside.
Slice some green chillies.
And some fresh ginger.
Dice the cooked potatoes.
Heat a tsp of oil. After a minute, Add 1 tsp of cumin seeds, green chillies and the cut ginger
Mix in the Methi leaves and sauté for a few minutes.
Add the diced potatoes. Sprinkle some turmeric and salt according to taste. Squeeze half a lemon juice to make it tangy.
Aloo Methi is ready.
Serve with Chapati/Roti
