STEPS
INGREDIENTS
Cut potatoes into small quarters and let them soak prior to preparing the rest of the ingredients.
Cut up all of the ingredients into small pieces. Grate the ginger. Substitute option: add a tea spoon of red hot pepper it you don't have any jalapeΓ±os.
Combine the onions, garlic and oil into a pan and cook over a medium heat.
Combine the tomatoes, pepper, and ginger in an bowl.
Cook the onions and garlic in the oil until they just start to brown, like pictured above.
For the spice mix we will need to add...
1 teaspoon of cumin powder
1 tea spoon of salt
1/2 a tea spoon of paprika
1/4 of a tea spoon of turmeric powder
All the spice mix into the pan with a tablespoon of butter.
Let it sit for 5 minutes, until the butter is melted and the veggies rip apart with ease. Then drain the potatoes and add it into the pan.
Let it cook for 10-15 minutes on low heat.
After the 10-15 minutes add in a few sprigs of chopped cilantro, stir and let it blend for a minute with the lid on.
Take it off the heat. (And don't forget to turn off the oven-bad memories..) and let it sit for 5-10 minutes.
And there you have it! Aloo Burji! Super flavorful tender potato slices in a rich light sauce. It goes will with Roti, bread, and even in a sandwich. Thanks for reading, i hope you Enjoy!
