Kabuli pulao .. Afghani pilau or afghani pilaf, different names same recipe ! ^^ anyway .. I fell in love with this recipe when I first had the first bite .. So I decided learn how to make it.
After a few failing attempts .. I finally found the balance to it and let's say mastered it 😅 Ok now move on ..

I don't know why the app crushes when ever I try to fill in the ingredients .. But oh well I just labeled down ..


On a medium heat add onions

2 tbs canola oil

Sauté onions until golden brown, then add garlic ..

Add the spices .. And stir for a minute

Then add chicken. You also can use: beef or lamb, and it's the most use for this recipe, but I prefer chicken which gives a gods taste and flavor.

Stir constantly for about 5 minutes

Then add 3 cups of water ..

Simmer for about 15 minutes ..

Meanwhile, let's prepare the toppings. Heat up 2 tbs of canola oil and add the carrots (cut into thin strips)

Add the sugar along

And stir constantly until the the carrots are soft or tender


Remove the carrots to an aluminum foil.

Add the raisins ..

Fry them

Until they puffed up

Remove them next to the carrots ..

Seal from all edges

And set aside

In the same pan add 2 cups of hot water


And the rice .. Bring your heat to high and let simmer until the rice absorbed water. (Remember, we don't the rice fully cooked).


Turn off heat for chicken after 15 minutes.

Remove the rice into the baking tray ..

Put chicken on top of the rice

And add one cup that chicken broth we cooked the chicken with.

Also place the carrots and raisins on top

Cover, and into the pre-heated oven on a (450f- 232c) .. For 20-30 minutes.

Rice is ready


Carrots and raisins are more soft ..


Pour in rice into a big plate

First layer should be rice, second chicken, third rice and last one carrots and raisins.
